SINLESS Kyoto (Nakagyo-ku, Kyoto City, Kyoto Prefecture), with the concept of "regulating the body with sweets," is a popular store selling gluten-free and low-sugar baked goods. The owner is Mr. Sakamoto, a low-sugar cookery researcher and university lecturer. After returning to Japan, he opened the store based on his experience living in Singapore, a country known as a health leader, and researching how to make sweets that are healthier for the body.

The company's signature canelé is made with rice flour instead of wheat flour or white sugar. By being particular about the amount and distribution of rice flour, the company has achieved a mellow, rich flavor while keeping sugar content low. The lineup includes cakes made with sake lees from the Sasaki Sake Brewery in Kyoto, as well as other sweets that make use of ingredients suited to the Japanese body.
