Traditional Chinese cuisine at Chinese restaurant "hakubi" in Gion

November 10, 2024 open

[The theme of Chinese restaurant hakubi (Higashiyama-ku, Kyoto), which opened near Yasaka Shrine, is "Manchurian cuisine," a banquet dish from the Qing Dynasty. The restaurant offers 25 different dishes, each containing a variety of delicacies from the mountains and the sea, to be enjoyed in small portions. Chef Sato, who honed his skills at Chinese restaurants in Ginza and Nishiazabu, Tokyo, is in charge of the cuisine. He creates dishes with originality while incorporating premium ingredients, such as caviar rice noodles, foie gras wrapped chicken wings, and three different types of beef.

A sample of dishes. All courses start at 14,300 yen for a standard course. The foie gras wrapped chicken wings are prepared with a lot of time and effort, including removing the bones and drying the wings for two days to give them a crispy texture. The smooth foie gras inside is a perfect match!

We also offer a shark fin course in which the main dish is shark fin stewed in an earthenware pot. The restaurant's Cantonese-based dishes are gently seasoned to suit the Japanese palate, so you can enjoy them all the way through without getting tired of eating them. The restaurant also boasts a wine cellar in the basement with over 600 bottles of wine and authentic Chinese tea purchased locally. A sommelier and Chinese government-certified tea master can suggest pairings that will enhance the flavor of your meal with a carefully selected cup of tea.

hakubi's Matsutake Mushroom Kamiyu Soup

Matsutake mushroom top-grade soup. The top-grade soup, known as the finest soup in Chinese cuisine, is made by simmering chicken, pork, Jinhua ham, etc. for about 6 hours and is full of delicious flavor. The fragrant matsutake mushrooms are from Nagano Prefecture.
