Ramen at Honke Daiichi Asahi's main restaurant near Kyoto Station...
The owner, Mr. Mita, says, "I trained under someone I respected, and I wanted to pursue my own ideals and particularties. Having trained for about seven years at the famous Ginjo Ramen Kubota, the restaurant attracted a lot of attention when it opened in 2017. His signature dish, tsukemen (dipping noodles in chicken white soup), features a soup cooked only with chicken and water to achieve a clean flavor. The chicken is carefully prepped and no unnecessary ingredients are added, resulting in a finish with no cloying taste.
The homemade noodles, kneaded with roasted germ to add flavor and sweetness, complement the dipping sauce. There is also a limited time menu that appears on an irregular basis, such as tantanmen, so please check the official X page.
