[Ramen Nishiki (Higashiyama-ku, Kyoto City, Kyoto Prefecture) has a luxurious atmosphere reminiscent of a kappo restaurant. The restaurant is run independently by Mr. Kumazawa, who previously served as executive chef at a famous ramen restaurant in the Kanto area (AFURI). The soup is made to enhance the flavors of the ingredients, and the homemade noodles are a unique blend of Hokkaido oats and whole wheat flour.
The Tai Dashi Ramen uses whole sea bream from Uwajima, Ehime Prefecture. The soup features a rich, deep broth made by extracting the head and core bones of the sea bream at low temperature for six hours, and the elegant and refined flavor will surprise you as if you were enjoying a soup. The noodles, which have the texture of buckwheat noodles, match the broth beautifully without interfering with the sea bream aroma.
