Menya EDITION (Higashiyama-ku, Kyoto City, Kyoto Prefecture) opened near Shichijo Station, serving Kyoto-style back fat soy sauce ramen.
The owner, who used to run a ramen restaurant in another prefecture, realized this up-and-coming restaurant based on his ambition to "do a middle-of-the-road back fat soy sauce ramen in his hometown Kyoto.
The interior of the renovated Kyoto machiya is bright and stylish with a sense of openness while making use of the good old atmosphere. It is visited by many single female customers and foreigners.
The soup, which maximizes the flavor of pork, is paired with matured noodles made by Kondo Seimen, one of Kyoto's leading noodle makers. The noodles are crisp and perfectly balanced with the soup.
In addition, all of the ingredients are made in Kyoto, such as Kujo leeks picked in the morning from farmers in Oharano, and tender, marbled pork from Tanba, Kyoto.
