PARLOR Koyaji in Matsubara is a cute furniture...
August 4, 2023 open
A five-minute walk from Shichijo Station on the Keihan Line, the standing drinking establishment [Kyokusha Sake Shop] (Shimogyo-ku, Kyoto City, Kyoto Prefecture) is a gathering place for sake lovers of all kinds, as its name implies. About two years after launching its e-commerce site, the store opened out of a desire for a place where people could actually experience the appeal of sake. The owner personally purchases sake directly from about 20 sake breweries, which are called "exclusive sake dealers," and offers a variety of carefully selected sake. The store is housed in a renovated 100-year-old machiya (townhouse), and seven "managers" change from day to day. The store is staffed by seven different "managers" who change shifts daily, including several certified sake sommeliers, who not only love sake but also have a wealth of knowledge about it.
The deciding factor in choosing a sake is to find something peculiar about it. It could be the personality of the toji or the president of the brewery, or the sake itself, such as the production process or the label. We place importance on the fact that the sake is "peculiar" or "addictive. Therefore, the owner himself visits the brewery and drinks the sake to confirm it with his own eyes and palate. Sake is priced at a flat rate of 500 yen per glass. You are welcome to drop in for just one cup of sake, so stop by at your leisure.
If the sake brewer is a master of his craft, the customers are also masterful, and the restaurant is frequented by sake connoisseurs. Of course, beginners are also welcome. It is an enjoyable bar where the crooks call the crooks.
