Oryori MIYAMA (Shimogyo-ku, Kyoto City, Kyoto Prefecture) opened as the second branch of the popular Gibier MIYAMA restaurant in Gion. The owner and chef, Mr. Kanda, a native of Miyama-cho, opened this standing bar-style restaurant to provide a casual taste of gibier cuisine, and the dishes are reasonably priced at less than 1,000 yen per plate. The restaurant has been attracting attention as a place where diners can enjoy meat such as bear and pheasant, which are hard to find elsewhere.
The gibier meat served at the restaurant has no peculiar taste and is surprisingly easy to eat. The reason for this is the development of slaughtering techniques, including methods for removing the blood from the game and preserving it. In addition, Miyama-cho, Nantan City, Kyoto Prefecture, where the wild game meat served at MIYAMA comes from, is designated as a national park and is rich in nature, which provides abundant food for the animals and good meat quality.
