A new restaurant has appeared in Shimabara, a town with a long history. It is run by Yu and Maako Nakagawa, both former employees of Blue Bottle Coffee. The store is located in Maako's hometown of Shimabara, in a renovated 100-year-old private house.
The eye-catching name of the store comes from an episode in which Yu wore a necktie during his days at Blue Bottle Coffee, which became his trademark. In the somewhat retro atmosphere of the store, which can be felt from its name, time passes leisurely as foreign tourists staying at a nearby guesthouse enjoy their breakfast, or an elderly lady in the neighborhood takes a break with a cup of coffee.
The coffee is roasted in house, mainly shallow roasted, and is roasted over a long period of time to suppress acidity, making it easy to drink while maintaining its unique flavor. Cheesecakes, baked goods, and other sweets made with coffee in mind are also popular.
