PIZZERIA VIVACE, a take-out store specializing in Neapolitan pizza, opened on the corner of Kawabata-dori and Higashioji-dori. The owner, who is overflowing with love for pizza, says that he spent four years of college studying Neapolitan pizza. After graduation, he worked at a high-class Italian restaurant, but he could not stop his desire to bake Neapolitan pizza, so he honed his skills at the famous Pizzeria Da Ciro in Ginkakuji before opening his dream restaurant. As he says, "I hope to give off an exotic feeling," you can feel the wind of Italy from the exterior decorated with tiles and lemons.
The dough, which is hand-kneaded every day, is a unique blend of Italian and Hokkaido flours. The appeal of this dough is that it is crispy on the outside, light and fluffy on the inside, and does not become hard even when cold.
