Standing in the kitchen are manager Seiya Nagata and his younger brother Masaya, who trained for eight years at a long-established kushikatsu restaurant in Osaka.
In the evening, there are two courses: the Kyoto Course, which includes about 10 kushikatsu and the Miyako Course, which includes about 15 kushikatsu, with a variety of items depending on the season. The kushikatsu are made with high-quality oil made from a combination of pork and beef fat, and the amount of fresh bread crumbs is adjusted according to the ingredients. In addition to the course menu, the restaurant also offers a popular lunch menu that includes a rice bowl or a stacked meal with kushikatsu.
