The cuisine uses mainly suburban ingredients such as seafood from Wakayama Prefecture, pork from Gojo in Nara, and vegetables from Yamada Farm in Fushimi. These carefully selected ingredients are transformed into dishes that make full use of the ingredients and his skills, such as terrine of Kyoto duck, which he prepared with his experience at a charcuterie restaurant, and Spanish risotto with kujo leeks, which he made with Kyoto's unique flavor based on his experience at a Spanish restaurant.
