Walk for 8 minutes from Tofukuji Station toward Higashioji Street. The owner, Chie, was born in Osaka and grew up in Hiroshima.
After returning to the Kansai region, he fell in love with Hiroshima okonomiyaki, and after gaining experience at izakaya, teppan-yaki, and okonomiyaki restaurants, he opened an okonomiyaki restaurant here near his mother's family home.
The okonomiyaki is made by spreading a thin layer of dough on a large griddle and topping it with a heaping pile of cabbage. The slow cooking process shrinks the pile of cabbage and slowly brings out its sweetness. I was also in love with Chie's deftness in combining the noodles and eggs for the finishing touch. Watching the process of making the okonomiyaki is also a blissful experience.
