Taste Jidori Ramen from a Chicken Specialty Shop at Menya Torihisa in Shogoin

In October, a chicken ramen store "Menya Torihisa" opened inside a butcher store specializing in chicken meat "Chicken Hisa. The owner, Mr. Takagaki, who loves cooking and knows everything about chickens, offers his special chicken ramen. I wanted to share the taste of Kyo-aka Jidori chicken and chicken broth with as many people as possible through familiar dishes, so I decided to create a special ramen that only a chicken specialty restaurant can offer. Chicken broth soy sauce ramen 850 yen. This ramen is a brushed-up version of the popular closing ramen that was popular when the restaurant was an izakaya. The broth is made from the guts of Kyo-Akachi-Dori chicken, and flavored with Kaeshi (soy sauce made from Shimane's Matsushimaya Shoten) and handmade chicken oil. The clear soup is as elegant and clean as it looks.
The clear, elegant soup is topped with chicken meat chashu pork and boiled egg, allowing you to enjoy the delicious taste of chicken in a single bowl. In addition to the signature chicken broth soy sauce ramen, the restaurant plans to offer seasonal ramen based on chicken broth.
For +350 yen, you can get a fried bean curd set that includes fried bean curd and rice.
Keita Takagaki, the owner, is from Kyoto City. He is the third generation to run a chicken specialty restaurant since his grandfather's generation. After gaining experience at his grandfather's and father's restaurants, he became independent in 2014. In his private life, he is a father with a daughter.
