Mr. Yamada, the owner of Udon and Soba [Ikkyuuan's], which has been loved for its additive-free Japanese-style dashi, has started a ramen shop specializing in fragrant dashi. Triggered by a popular reality show on YouTube, he was rebranded by a celebrity known for rebuilding a ramen shop, and decided to walk the ramen path.
