While neon-lit Korean restaurants are all the rage, a new chic Korean restaurant has opened in Kiyamachi Gojo that is a favorite of adults. Upon opening the massive wooden door, you will find spacious table and counter seating with a traditional atmosphere.
We are welcomed by the owner, Ms. Kyohime Kim, who is originally from South Korea. Born and raised in Seoul, Korea, Kyohime came to Japan after graduating from high school and entering college. I visited Kyoto many times to meet friends who were from Kyoto, and I thought I really liked the calm atmosphere of Kyoto. She and her mother, who ran a diner in Yokohama for about 20 years, work together to run the restaurant.
The dishes born from her mother's experience, Kyohee's recipes, and the bond between mother and daughter have all gained a reputation for their elegant flavors based on light seasoning. Korean food has a strong image of gochujang (red pepper paste), but I try to avoid using it as much as possible. We also make our own sauce from scratch for our pancakes and takkang mari.
