This restaurant specializes in white pork cutlets that are cooked slowly at a low enough temperature to prevent bubbling. What is surprising when looking at the menu is the wide range of choices. The restaurant offers five types of pork: Tokyo X, a top-ranked brand-name pork that is a crossbreed of Beijing Kurobuta, Berkshire, and Duroc, Hayashi SPF Pork, Iwanaka SPF Pork, ice-cold aged Pork Princess, and Kyoto-source brand-name pork. The restaurant also offers a choice of loin, ribeye, and filet of pork.
