The Fushimi-born chef uses vegetables grown by Fushimi farmers in his dishes, and the after-meal coffee and tea are also Fushimi brand. Japanese ingredients such as mirin (sweet cooking rice wine), sake kasu (sake lees), and bonito dashi (dried bonito stock) are subtly incorporated to create a taste that harmonizes with the restaurant's appearance.
The store is also a treasure trove of quality fixtures, from the Kumiko ranma and Tsunadai sliding doors to the hidden nails and other small items.
