Everything is handmade, from the Spanish mackerel fritters with carrot tartar, to the country-style simmered eggplant from Tahata, to the korinky from Kyoto Tanba with baby sardines, to the kombu tsukudani (tsukudani food boiled in soy). [On top of stylish dishes from HASAMI PORCELAIN are vegetables from five reliable farmers, including Daichi no Ibuki Farm in Yamatokoriyama and Red Rice Nature Farm in Kizugawa City, as well as fresh fish directly from Tango.
This hearty and satisfying one-soup, eight-course lunch was actually prepared under the complete supervision of Shokudo Kukai, a former workplace of Mr. Fuse, who also used to work there. This summer, Shokudo Kukai moved to a new location, and the owner, Mr. Fuse, has taken over the menu, which is very popular among the regulars. The sake lineup, which is sourced from local liquor stores found during his travels throughout Japan, is also outstanding.
