A new restaurant by a young chef who dares to compete in the spiced curry boom in Kyoto with European-style curry has appeared. Mr. Koishi, who has a French background with 10 years of experience cooking in Western-style restaurants and hotels, is now operating a lunchtime restaurant on loan at the "Bar Lemon".
The curry has a nostalgic flavor, with a base of kombu (kelp), chicken stock, and aromatic vegetables, and a flavorful blend of red wine and beef tendon, with chutney added for a fruity taste. The use of butter and flour is kept to a minimum, making this European-style curry healthy.
