The first restaurant specializing in brisket opened in Kyoto. Brisket is a part of the front belly of beef. It is a rare part of beef that is now gaining a reputation for its pleasantly chewy texture and rich flavor. The restaurant offers a wide variety of brisket dishes, and the best is the chadorubagi. The brisket is sliced thinly in a Genghis Khan pot and lightly grilled like yakishabu. The broth and egg poured into the grooves around the rim can be either dipped into the meat or eaten as is. The restaurant is open until 24:00, so feel free to come in any time of the day to enjoy a dish of chadorubagi or brisket as a side dish.
