The new store by MOTOI, one of Kyoto's leading modern French restaurants, specializes in gyoza. It all started with the gyoza that owner and chef Hajime Maeda made for his daughter.
``I was worried about going out to buy things early in the morning and returning home late at night after work, and not having much time to spend with my daughter.I wanted my daughter, who loves gyoza, to be happy, so after returning home, I repeatedly made prototypes and this was born. This is the gyoza,” Maeda said. In May of this year, during the coronavirus pandemic, they started selling it in stores and online to help people prepare meals at home, and it quickly became popular, leading to the opening of a store.
Their signature papa gyoza, which is known for its plump and chewy shrimp, is made without garlic, with ginger to balance out the overall flavor, and coriander as an accent.
``All seasonings are additive-free.We aim not only to pursue the taste and texture, but also to make gyoza that can be eaten with peace of mind.We also sell frozen gyoza to take home, so you can enjoy them at home with your family.'' is not it."
In addition to four types of gyoza, the restaurant also offers a la carte dishes that require careful preparation and time-consuming work. The pride of being a Michelin-starred French restaurant oozes with the cuisine that breathes the French spirit and will satisfy your soul.
