The fermentation café produced by the famous saikyo pickles store [Kyoto Ichinoden] will relocate and reopen in 2022. All dishes and afternoon tea are prepared with Kyoto-brand fermented foods such as amazake made from rice malt by Hishiroku, a long-established koji maker, Sawai Soy Sauce, and Chidori-Vinegar.

The afternoon tea, available only on Saturdays, Sundays, and holidays by reservation, features a variety of delicious discoveries on the plate, such as mirin and soy sauce Mitarashi red bean paste pudding, koji miso and cheese pound, and cream cheese sandwiched in shio koji infused dough. Lunch, served both for breakfast and lunch, features a variety of dishes and drinks that make use of fermented foods, including meat and fish marinated in soy sauce, miso, and shio koji. Ingredients for both Fermented Gozen and Fermented Afternoon Tea are subject to change depending on availability.
