Uji tea, which has developed along with the tea ceremony and chanoyu culture of Kyoto, is a blend of mainly tea leaves produced in Kyoto Prefecture and processed in Kyoto Prefecture. By covering the tea leaves for 20 days or more when they are just beginning to sprout, the tea leaves suppress the production of catechins, which are bitter-tasting substances, and store an abundance of amino acids, which are components of flavor and sweetness. The highest quality tea is produced by steaming and drying the tender sprouts while rubbing them, and is characterized by its bright green color. After being brewed, the tea leaves can be eaten as is, with ponzu (Japanese citrus juice) and other seasonings.
About "Matcha
Matcha is made from "tencha," which is grown in a different way than sencha. After the sprouts are steamed, they are dried without rubbing, and the soft leaf pulp is ground into a powder using a tea mortar. Unlike regular tea leaves, the powdered form is consumed as is, so all the nutrients of the tea leaves can be taken in. Whisking makes the tea mellow and tastes great even for those who don't like bitterness.
