Mori Gaku introspection

Craftsmanship shines through in a course meal at Sushi Morigaku, a sushi restaurant in Kiyamachi.

June 02, 2024 open

Sushi Morigaku (Nakagyo-ku, Kyoto) is tucked away at the end of a street in Kamikiyacho. The chic black-themed interior resembles a bar. The owner, Mr. Masakazu Inoue, greets you with a smile from behind the counter and has been cooking Japanese cuisine for about 30 years. After working as the head chef at Karasuuma Kyoto Hotel and Hotel Okura Kyoto, he honed his skills as a sushi chef and opened his own restaurant.

Only courses are available for both lunch and dinner. Sushi is made with seasonal ingredients selected directly from Maizuru Port and other ingredients selected from all over Japan, aged tuna, and other items with a little extra care. The evening course includes five other dishes in addition to sushi. At the grill, which can be seen from the counter, they perform their specialty, straw-roasted bonito, with the lights turned off for a live performance. The restaurant also attracts diners with a la carte dishes that showcase the craftsmanship of Kyoto ingredients such as Kyoto vegetables. Try it on a special occasion when you want a little luxury.

An example of an evening course priced at 17,000 yen. Aged tuna nigiri, one of the owner's specialties, with a rich flavor after a week of aging. The mildly flavored Tajima red vinegar made from Kyoto Kinuhikari rice and sakekasu goes well with it.

A dish that appears in the middle of the course. On this particular day, it was a dish of pike conger eel shijo, Kamo eggplant from northern Kyoto, and deep-fried Manganji togarashi (red pepper). The broth made from Hokkaido kelp is very flavorful!
