Kohei Furumura, in charge of cooking, and Sakura Moriguchi, in charge of service, both came from the famous Italian restaurant "Vena" (Nakagyo-ku, Kyoto City, Kyoto Prefecture). While working together, they hit it off and opened the restaurant, which they named "ablution moku" (沐moku) because their names have the character for tree in them.
The dark green wall tiles, antique lamps, and chairs blend into the old townhouse with its mud walls, creating an air of retro style. The concept is a tavern. The concept is an izakaya (Japanese style bar)," says Moriguchi, "where you can enjoy dishes that are served as a course in an a la carte setting.
The cuisine, like the famous Dote-ni, is based on Japanese cuisine, but there are also a few Italian and French elements here and there. Mr. Furumura generously demonstrates the skills he has cultivated over the years. The sake lineup, selected with an emphasis on complementing the food, is also excellent. Mr. Moriguchi's specialty is classic wines, and there are always about eight different kinds available by the glass, which change daily, so you can enjoy the marriage of Japanese food and wine.
