Mita Hisa, which has been manufacturing and retailing yuba for over 100 years since its establishment in 1920, opened its first restaurant near Kyoto Station. The restaurant offers a lunchtime menu that allows customers to compare different types of yuba so that "people who do not yet know the appeal of yuba can become fans of it.
Kyo-yuba Wagyu Gozen for 3,480 yen. The three kinds of yuba in the foreground are kujo, kokimi, and komaki yuba. The main dish, roast beef, is made from ichibo, a rare type of Japanese black beef. Lunch menu available from 11:30 a.m. to 3:00 p.m. (LO).
Visitors can compare and taste the individual characteristics of each type of yuba: the thickening of kumiage yuba, which is scooped as soon as the membrane is formed; the richness of kokumi yuba, which is made with layers of ultra-thin yuba made with special soy milk; and the elasticity of komaki yuba, which contains bonito broth.
Mitakyu soft serve is 400 yen each. Choice of three types: soy milk, milk-based green tea, or soy milk & green tea mix. Original soft serve with moderate sweetness
The takeout menu includes unique items such as Kumiage Yuba and Kyo Yuba Chips as well as Soy Latte and Mitakyu Soft.
