The owner, Mr. Ishimaru, has had his own restaurant for about 30 years after training at a ryotei restaurant in Gion. He has been serving Japanese cuisine, mainly fish dishes, using fresh seafood purchased at the Kyoto Central Market every morning. Some regulars come here every day for lunch, which changes daily, and the restaurant is full within five minutes of opening.
At night, the restaurant offers a wide variety of a la carte dishes, which many customers enjoy with drinks. Ishimaru's motto is "Just make good food," but he is also considerate enough to serve dishes according to the tastes of his well-informed regulars. The taste of Fukui can be enjoyed here and there, such as chirimenjako (dried sansho) and koshihikari (rice) made with sansho (Japanese pepper) grown in the local fields of Fukui.
