A 150-year-old French townhouse in Fushimi Momoyama [Mizunomiya KYOTO FUSHIMI]
［In June 2019, the building that has been protected by the owner of Saito Sake Brewery and his family was reborn as the French restaurant Mizunomasa KYOTO FUSHIMI.
The Fushimi-born chef uses vegetables grown by Fushimi farmers in his dishes, and the after-meal coffee and tea are also Fushimi brand. Japanese ingredients such as mirin (sweet cooking rice wine), sake kasu (sake lees), and bonito dashi (dried bonito stock) are subtly incorporated to create a taste that harmonizes with the restaurant's appearance.
The store is also a treasure trove of quality fixtures, from the Kumiko ranma and Tsunadai sliding doors to the hidden nails and other small items. In fact, we didn't use a single screw or nail in this renovation. We did our best to preserve as much of the original form as possible and make it look more beautiful, by highlighting the beams with lighting and using antique furniture in the dining room," says Aoyama, the manager.
