Michinari Kato, the owner, started his restaurant 17 years ago from a food stall in Shiga and took the world by storm with his exquisite Chinese soba noodles. This spring, he relaunched the restaurant as a private store. The restaurant offers a wide variety of ramen dishes, including standard ramen such as niboshi-soba made with niboshi broth and a variety of limited-time-only ramen dishes made with the inspiration of Mr. Kato, who is a man of ideas.
The most recommended is the phantom Chinese noodles (a.k.a. mabochu), which were once very popular. It is made with a thick broth made from dried bonito and mackerel flakes, flavored and aromatized with spiced oil and soy sauce, and served with medium-thick noodles that have a firm, chewy texture. The simple and gentle taste permeates the entire body. 10 servings a day are limited, so early arrival is recommended.
