A bakery founded in Austria in 1569 and later awarded the title of royal purveyor by the Habsburg Empire is now located in Okazaki, Kyoto. The owner-chef, Takahiko Nozawa, is a craftsman of traditional Austrian pastries and breads. He trained for about 4 years in Vienna and Germany, and has been active in a wide range of fields, including opening his own bakery in Tokyo and being involved in product development for a company.
