A new store has opened in Pontocho with the concept of straw grilled and mizutaki. Straw-grilled bonito is a commonly used method for tataki, but here they also offer ingredients that you wouldn't find in straw-grilled dishes elsewhere, such as sea bream, duck, and Kyoto red chicken. All straw-grilled dishes made with fresh ingredients are seared, and the recommended way to eat them is to eat the sea bream with salt, the duck with soy sauce, and the Kyoto red chicken with ponzu sauce.
