[Popular Ramen Noodles at Kyoto Ekimae Store
It was established here shortly after the war and has been welcoming people at the gateway to Kyoto. The lines that form early in the morning are a Kyoto specialty. The ramen, which warms and soothes the tired bodies of those who arrive after a night shift or on an overnight bus, is pork-based and soy sauce-flavored. The soup is made by cooking the pork bones in a short period of time to create a clear broth from which only the umami (flavor) is extracted.
In order to match the flavor of the noodles, we use medium-thick noodles made from a blend of several flours and aged to dryness. The noodles are made by Kondo Seimen, and the soy sauce is made by Goko Shoyu, both carefully selected from long-established soy sauce factories in Kyoto. The kujo green onions and mung bean sprouts are also produced in Kyoto, making this a bowl of soup that is a concentrated taste of local delicacies.
