Mr. Otake, who has loved hamburgers since childhood, opened Meat & Western Cuisine Otake (Higashiyama-ku, Kyoto) after training not only as a Japanese or French chef but also as a butcher. His famous hamburger steak, made without any eggs, onions, or other glue, is still going strong even after his relocation from Kawabata Nijo to Kawabata Matsubara.
