This set contains an assortment of three of Kyoto Machiya Mugishu's popular craft beers: Kölsch (Kyoto Machiya Mugishu), Alt (Kyoto Hanamachi Mugishu), and Dry Stout (Kyoto Heian Mugishu). Each beer is inspired by the Kyoto dialect, with "Karuosu" for the light, refreshing Kölsch, "Mamari" for the full-bodied, mild-tasting Alt, and "Mamari" for the bitterness and aroma of roasted malts, all of which are popular among beer connoisseurs. Dry stout, favored by beer connoisseurs for its roasted malt bitterness and aroma, is nicknamed "Kuro-osu". Castella Udono was established in Kyoto in 1971 as a sponge cake specialty store. The founder, Tadaaki Udono, who hails from Nagasaki Prefecture, the birthplace of sponge cake, honed his skills at a sponge cake company before setting up his own business in Kyoto, and in 2001 he opened a direct sales store near Enmachi Station. Each castella is carefully baked by hand with additive-free dough using a method handed down from the time of the company's founding, and the craftsmanship shines through in the moist baked dough. Using the technique of assemblage, two breweries that continue to brew famous sake in Fushimi, a famous sake brewing area, have come together to create this collaboration. This exquisitely blended blend of Yanagi from Tokubei Masuda Shoten, which is served in airline business class, and Junmai Daiginjo Yamadanishiki 49 from Kitagawa Honke's flagship Tomiou series, is exciting even for sake fans, and the addition of premium 10-year old sake for the kakushimi flavor brings out the best in each sake, while at the same time giving it a mild and deep finish. The result is a mellow, deep finish that makes the most of the qualities of each sake. The special taste, named MICHIRU, means "to retain an unknown taste," and can be enjoyed by comparing it with the unblended version.
