Exquisite balance of sweetness and umami created by the skill of the chef

Chinese Restaurant Karin opened in 2022 in Kitashirakawa near Ginkakuji Temple and the Philosopher's Path. The owner-chef of this Chinese restaurant is Mr. Koh Nakahara, who was born in a family that ran a Chinese restaurant, graduated from a culinary school, and worked not only as a Chinese chef but also as an Italian and Japanese chef at hotels and restaurants throughout Japan. The cashews and walnuts are cooked in an elaborate process that involves boiling down cashews and walnuts in candy, deep frying them in oil, cooling them, loosening them, and finally removing the excess oil before serving. The cashews are then deep-fried in oil, cooled, loosened, and finally finished after the excess oil is removed. Enjoy this hidden gem from a popular Chinese restaurant.

Mr. Nakahara ran a Chinese restaurant with about 60 seats in Fushimi, Kyoto for 15 years from 2005 to 2020, but decided to expand the restaurant in Kitashirakawa because he wanted to create a restaurant where he could spend more time with each customer. It is said that he made it smaller and started anew. Mr. Nakahara's Chinese food, carefully prepared one by one, has gained a reputation for being delicious, and since opening in 2022, the restaurant has become a hot topic in Kyoto.
