[Ristorante Nakamoto] was opened in Kizugawa City in 2011 by Chef Akihiro Nakamoto, who studied in various places including Florence. A tasting set where you can order and taste two types of ramen made by one of the most popular Italian restaurants in the Kansai region. Aged soy sauce ramen is finished with an original aged soy sauce sauce using Igeta soy sauce from a long-established soy sauce store in Nara [Inoue Honten], giving it a nostalgic taste of old-fashioned ramen. Kizugawa green onion salt ramen uses green onions directly delivered from Yamashiro-cho [Akita Farm], and pursues the rich flavor of green onions with green onion oil that traps the aroma and flavor and green onion paste mixed with yuzu pepper. Both are based on a rich soup made from chicken bones made with fresh chicken and Japanese-style dashi, and are topped with thin noodles procured from a long-established noodle maker in Kyoto [Menya Dakuku] and the store's special char siu.
