It takes time. In pursuit of the ultimate sake for drinking, the sake has a full-bodied and sharp taste by thoroughly working with yeast.

Kitajima Sake Brewery, located in Kosai, Konan City, Shiga Prefecture, was founded in 1805. Although the business was temporarily suspended during World War II, they have been brewing sake using rice and water from Omi for over 200 years.
