In August of last year, he spent three months on a temporary lease in Fushimi, and in January of this year, he opened his own restaurant near Toji Temple, taking advantage of the good feeling he got at that time. In no time at all, the restaurant has grown into a popular restaurant that sells out of soup every day. The owner, Mr. Nakatani, and his beautiful wife, who assists in the preparation of the soup, work in tandem to create an ultra-thick chicken soup. Although it looks quite rich when it is mixed with noodles, it is surprisingly light when you try it. The secret is that they use not only chicken stock but also plenty of vegetables. The simplest version is the Tokoton Chicken, but there are also Tokoton Red with Ichimi, Tokoton Fish with Fish Meal, and Half & Half with both.
