The former Shimogyo 27 Program Elementary School, established in 1869 as Shimogyo 27 Program Elementary School, was relocated to its current location in 1933, and the newly built school building has now been converted into a hotel. The Hotel Seiryu Kyoto Kiyomizu, with its exterior and interior designed to preserve the design of its predecessors, breathes the spirit of Kyoto, a place where authenticity is passed on from generation to generation. The bar space [K36], which was created on the top floor of the hotel, has two spaces: "TheBar" inside the hotel and "Rooftop" outside. Minoru Nishida, who supervised the entire project, stands at the counter in the center of the rooftop, which offers a 360-degree view of Yasaka Tower and Kyoto Tower. He is a well-known figure in Kyoto's bar industry, admired by all bartenders.
Three years ago, when I saw the sunset on the rooftop of the property, which was still in its elementary school days, I pictured a scene of smiling customers standing in front of the oval counter. I have seen rooftop bars all over the world, but most of them overlook the urban nightscape. Here, at eye level, you have a special view that you won't find in any other country."
The menu is composed mainly of classic cocktails that overlap with the history of the architecture, all in a formulation that can only be found at [K36]. The butler's role is to think through how to please the owner. There is no other country in the world where you can find drinks from all over the world as you can in Japan. I want to continue to evolve from here so that the cocktails we serve that night will be a good memory of the trip for our guests." ［While welcoming customers at K36, Nishida watches over the young bartenders as they learn.
