Mr. Matsumoto, who can be considered a sandwich professional, opened his own store in Sakyo-ku, where he was born and raised. His specialty is sandwiches made with homemade focaccia, which he bakes daily in his store. The focaccia is made with whole wheat flour from Italy, which is rich in minerals and flavor, and organic olive oil from Spain, and is baked softly so that it is easy to eat as a sandwich. It is filled with an unbelievable variety of vegetables, mostly seasonal in Kyoto, making it seem as if you are eating a salad.
