[Misonobashi Sakai (Kita-ku, Kyoto City, Kyoto Prefecture) is celebrating its 42nd year in 2024 since becoming independent from the main Chinese restaurant Sakai. The restaurant is packed at lunchtime, and most of the customers order cold noodles (cold noodles are called chilled chuka in the Kansai region).
Cold noodles, which have been featured on TV programs and have many celebrity fans, is the restaurant's signature dish. The sauce, which is made slowly over a period of two to three days by combining soy sauce blended from chicken bones, a variety of seasonings, and sesame sauce, is thick and mild, rich, and slightly sour, and goes well with the chewy, thick noodles.
Tenshinhan is also a secret favorite among fans. The first thing that surprises customers is the thick, brown-sauce-like bean paste. Generally, amazu (sweet and sour) sauce is the norm, but here the secret ingredient is kaeshi, which is used in ramen noodles.
