Osaka-based craft beer brewery Derailleur Brew Works, which also operates the popular Kyoto bar Stand Umineko Koto and SUI., has opened its first bakery cafe, OUI. It has already become a popular place to relax and enjoy everything from morning breakfast to apero.
The unique feature of this product is that malt lees, a byproduct of craft beer production, are upcycled and used in breads and pastries instead of flour. Malt lees are rich in dietary fiber and protein and low in calories. Under the theme of "It would be a waste if it didn't taste good," you can enjoy delicious and ethical meals such as curry bread filled with spices, cream bread with an elegant and moderate sweetness, and simple salted bread.
In the cafe space on the second floor, you can eat in not only bakery bread, but also morning plates, lunch plates, and snack plates. The bakery also offers morning plates, lunch plates, and snack plates, as well as breads from the bakery, which are baked to order and served fresh.
