Mr. Otake, who has loved hamburgers since childhood, opened Meat & Western Cuisine Otake (Higashiyama-ku, Kyoto) after training not only as a Japanese or French chef but also as a butcher. The owner's signature hamburger steak is made from the shank of Danzan Kogen beef from Aichi Prefecture and Sanshu pork from Aichi Prefecture.
