The baumkuchen specialty store [Zusess Wegtus], which was established in 2007 in Murasakake, Kita-ku, has moved to a new location. The owner, Mika Mori, who holds the title of Meister of Confectionery, a German national qualification, has brought her masterpiece of sweets to the city.
Ms. Mori, who was originally a pharmacist, mixes the ingredients she has carefully selected "so that they can be eaten with peace of mind," and patiently makes the layers in front of a gas fire for about 40 minutes. The 15 or so layers of baumkuchen completed in this way are six or seven kinds, including honey, green tea, bitter chocolate, and other standard items, as well as seasonal items. The plan is to create a café space in a little while.
