The new GOOD LOCAL BURGER SERIES is a new type of hamburger that is both healthy and delicious, allowing customers to fully enjoy the appeal of fermentation. A total of five main menu items are always available: four regular items and one seasonal item. Enjoy the "real Kyoto burger" made with local ingredients and the innovative concept of fermentation. The burger plates are made of logs from thinned Kitayama cedar trees in Kyoto Prefecture, giving the burgers the warmth of wood.
Aged onion koji/Hiyoshi Kogen pork cutlet burger is a luxurious and satisfying combination of pork cutlet made with Kyoto-grown Hiyoshi Kogen pork and homemade onion koji to slowly extract the flavor of the ingredients, best matched with a spicy hot sauce from Kyoto's long-established sauce maker [Ojika sauce] and the sourness of sliced apples. The burger is a luxurious and mouthwatering dish.
The Soy Sauce Aged Grass Fed Beef GOOD Burger features a mild and flavorful patty made from 100% grass fed beef minced from healthy grass fed exclusively on natural grasses and infused with Hishio and Shio Koji from KAKUHAKUSHO KAMOSHIKA in Arashiyama, Kyoto. The spicy alyssa mayonnaise with a hint of spiciness guarantees a taste that will keep you coming back for more.
The brown rice and grilled meat burger is made with a fiber-rich brown rice bun that has a chewy texture and a deep flavor. The burger is made with grass-fed beef and plenty of fresh, lush seasonal vegetables. The key to the delicious taste is the Kyoto Uji heirloom egg and lime tartar sauce on top of the patty.
The Teriyaki Tempeh Japanese Burger is a healthy yet satisfying Japanese-style burger with tempeh, a fermented soybean food originally from Indonesia, and a fried egg made from a heirloom egg produced in Uji, Kyoto. The deliciousness is enhanced by the teriyaki sauce made with sake hishio from Onojin Miso Soy Sauce Brewery, a long-established soy sauce store in Tango, Kyoto, which is representative of Kyoto's food culture.
