Chef Katsumura, who studied at some of the best Italian restaurants in Kyoto, opened the restaurant in a secluded location on the second floor of a building on Nijo Street, a six-minute walk from Karasuma-Oike Subway Station. Before opening the restaurant, he spent 7 months working as a wholesaler in the Kyoto Central Market, and then 11 months at a famous kappo restaurant, where he learned the essence of seafood from multiple perspectives.
The grand menu features traditional dishes that never fade away, such as squid ink sauce and Roman-style carbonara. The daily menu features a lineup of seasonal offerings centered on seafood, such as carpaccio, tartar, and gratin.
Of the extensive menu, the chef's top choice is the chilled pasta with scallops and beets for 2,090 yen. The sweetness of the vegetables is found in the flavor of the shellfish, with a hint of bitterness from the watercress at the end. The flavor is as impressive as its appearance and conveys the vitality of the high-quality ingredients.
