[Located quietly on the first basement floor of Isetan JR Kyoto is the first restaurant of Kyoto Yamaroku, which has been in business for more than 90 years and is engaged in the production of Saikyo pickles. [Inspired by the traditional miso floor and barrel miso, the concept of the restaurant is a space with miso barrels. The warm-colored walls kneaded with real miso give a soft impression. While chic and modern Japanese style, the round-table counter where customers enjoy their set meals is nostalgic and relaxing.
This Saikyo zuke uses traditional miso floor and barrel miso, in which fish is carefully selected by craftsmen and custom-made Saikyo miso is used. The fish is then marinated for two times to give it a mellow and rich flavor. The meat melts in your mouth with just the touch of a chopstick. In addition to the saikyo-yaki, all set menus come with four small potted dishes that change with the seasons, rice, and miso soup, and the rice is first-class rice that is carefully selected by a five-star master chef to match the saikyo-yaki.
