[KŌSA, located on the 3rd floor of the Ace Hotel Kyoto, was temporarily closed as the venue for the "Noma Kyoto" pop-up restaurant in 2023 and will reopen at the end of December 2024, with a new spring course menu starting in early March.
Incorporating the California-originated farm-to-table food culture, the Kyoto-based restaurant partners directly with farmers and producers in the Kansai region to utilize every last bit of seasonal vegetables, meat, and fish. The restaurant provides a deep connection with local farmers and sustainable food experiences.
This spring menu features New American cuisine featuring Kyoto vegetables from Higuchi Noen, a farm in Takagamine, northern Kyoto, that has been in operation for over 400 years. [Higuchi Farm has been preserving the seeds of traditional vegetables that have been passed down from generation to generation, and now the 14th generation owner, Masataka Higuchi, is working to grow vegetables that are suited to the climate. The farm's vegetables are rarely distributed in the general market and are sold only at some restaurants, direct sales, and co-ops.
The dinner course offers a total of eight different types of dishes, including soy milk-based smoked seasonal vegetables, meat and fish main dishes, soups, and desserts. Experience a new menu at [KŌSA] while feeling the arrival of spring.
