Hyssop, a healthy casual restaurant in Shijo-Kawaramachi, Kyoto (Shimogyo-ku, Kyoto City, Kyoto Prefecture), has added to its summer menu the peach shaved ice that was so well received last year. This year, the shaved ice is extravagant, topped with a generous amount of juicy peach compote topped with lemon and mint. There are two layers of sauce, one thick with peach purée and the other with lemongrass, so you can enjoy the changes in taste and flavor as you continue eating. Also hidden inside are fromage blanc and honey lemon compote, which together with the peaches give the cake a refreshing flavor similar to that of a peach rare cheese cake.
