●Mikawa Sake Brewery/Searching for a Warehouse
Mikawa Sake Brewery stands beside a large field and is run by the family of the brewery's toji (master brewer) and several brewers. The brewery uses traditional brewing tools and methods to produce a unique sake with a rich acidity.
[The sake produced by Mikawa Shuzojo is so unique that it is called "metamorphic sake" by some. Among them, Kinya Mikawa's favorite, "Mai-Bijin SanQ," is characterized by its strong acidity while being mellow and rich in umami. However, it does not have a sharpness that would make one feel a twinge, but rather a fruity, elegant sourness with a roundness that is typical of lactobacilli. It has a taste that is sure to satisfy some people who are swamped with it.
Since the brewery makes a small amount of sake by hand, some products are hard to find. Visit the brewery to taste the gap between traditional production methods and innovative taste, a unique and addictive sake.

●Kitazen Shoten/Northern Front
Kitazen Shoten continues to brew sake at Imajojuku on the Hokuriku Highway, surrounded by seasonal nature and buildings with a long history dating back to the Edo period. Although surrounded by mountains, the area surrounding the brewery, which has been a key transportation hub since the Heian period (794-1192), is filled with sights and delicious food. In recent years, the area has become popular among tourists for its romantic scenery.

When you look up, the ceiling of the gassho-zukuri warehouse is blackened with soot, reminding you of the accumulation of years since the Edo period.
